We were exposed to many aspects of Japanese culture. For instance, many Japanese holidays and festivals were observed, and introductory Japanese language was incorporated into the curriculum. I remember that we pounded mochi each year during a festival, and made soup afterwards. Also, we were introduced to some Japanese folk lore as well.
Shikoku and Hokkaido are on the top of my list. I actually don't remember all that much Japanese from the program, at most I get vague recollections when thinking about hiragana and basic numbers.

はじめまして、Kierenさん。I'd also be interested in hearing about the content your class covered. I only have vague recollections of the folk tales from my time in elementary school. However, I have covered some material that may be of interest to you through this Japanese supernatural fiction/film class I'm taking this semester.
